I haven't cooked anything different for a while but we spotted some very nice tuna steaks at Woolies yesterday so I hunted up a recipe on the internet today and cooked Cajun tuna with mango salsa and mixed salad greens (aka lazy leaves) for tea. I've always liked the idea of Cajun cooking, blackening seems to be part of the process which appeals to me because I can legitimately wander off and go on the internet while it's
burning cooking. Unfortunately I overdid the Cajun spices a tad and only now, an hour later, are my lips starting to recover. The salsa is mango, capsicum and cucumber with coriander and chilli with lime juice. It's our first chilli off our first chilli bush, not a big deal perhaps but the path to self-sufficiency has to start somewhere. Despite browsing through a few sites in search of a recipe for tuna steaks I ended up using this one - off the Bundaberg sugar web-site. I must remember to add a decorative slice of lime before I take the photograph next time.
